Bought this shell-shape mould recently. It is supposed to be used for making jellies or ice-cubes, but when I first saw it in the shop, I had a totally different idea in mind.


Somehow I was thinking of Kuih Bangkit when I saw it. I would have bought a few more moulds if not for the fact it was the last one on the shelf! Oh well, one is better than nothing.
So last weekend I decided to try it for making the traditional shortbread. It was quite a fiddly process at first as the dough kept sticking inside the holes of the mould and difficult to knock out. Finally an idea hit me. Shortbread dough is usually dusted with sugar before baking, so I decided to dust one side of the dough with caster sugar before fitting it into the holes of the mould. Luckily this seemed to work and the sugar coating turned out looking like sand on the shells after baking.

Wow, you’re very inventive! I make shortbread all the time but never would’ve thought to use icecube moulds.
They turned out very well, really look like the chocolates!

Basic shortbread recipe is very simple and easy to remember, just 3 parts flour, 2 parts butter and 1 part sugar (by weight), cream butter and sugar, then mix in flour. Bake 150 to 160C for about 30 minutes. I’ll put up a proper recipe for this batch if you want.

As I said in the post, it was the last one in the shop. I got it from one of the Vietnamese variety shops in Footscray.

Good luck with finding the mould. Try the Asian variety shops, especially the Vietnamese ones. I have gone back to the shop where I found the mould, but they have not re-stocked any more of these moulds, what a shame.

Wow! Really pretty mould and such a beautiful end product!
As said before, they look like the Guylian Seashell Chocs you get! Delicious!
I like the idea of using different moulds to make shortbread – will have to experiment now!
