Filling:
105g milk; 20g caster sugar; 20g egg yolk; 20g cornflour; 45g butter; 1.5g gelatine leaf; 5g reduced espresso coffee or coffee essence paste; 330g cream
Almond Praline:
50g flaked almond; 25g caster sugar; 15g water
