【廚娘香Q秀】Cantonese Steamed Sponge Cake 馬拉糕/馬來糕

This is the modern-style Cantonese Sponge Cake.

馬來糕
材料 Ingredients:
低筋麵粉過篩 600g cake flour, sifted
發粉 37g baking powder
全蛋 9粒 eggs
吉士粉 40g custard powder
三花奶水 1罐 can evaporated milk
玉米粉 40g cornflour
無鹽奶油 200g unsalted butter
糖 500g sugar

做法 Methods:
1.蛋、糖先下,攪拌機慢速打散至發泡。
2.加入發粉、玉米粉、吉士粉,打散粉狀材料後,麵糊再慢慢加入麵粉。
3.加入奶水,最後慢慢加入隔水加熱的無鹽奶油。
4.麵糊倒入一水壺,再倒入模具只要倒六分滿。最後輕輕敲出麵糊的氣泡。表面並用鋁泊紙輕輕蓋住。放入電鍋。
5.電鍋一杯半的水,蒸25分鐘。
6.拿掉鋁泊紙,切開擺盤,完成。
