Season 16 of MasterChef Australia will premiere on April 22, 2024 on 10 and 10play. There will be four permanent judges with three new judges joining Andy Allen this year. One of the new judges is a familiar face on MasterChef Australia, Poh Ling Yeow, who was an alumna from season 1 and has also been guest judging in many previous seasons while the other two are new faces on Australian television, food writer Sofia Levin and French Michelin-Star chef Jean-Christophe Novelli. An overseas trip will also return this year.

In the past week or so the recipes on the official MasterChef Australia site are not updated as quickly as usual, a few recipes were late by a couple of days to update! So I can only update when they became available… The sponge recipe by Pezza from the previous episode is finally available today… During the episode Poh was worried the sponge was too blond, now looking at the recipe it is a cornflour sponge so the blondness of the sponge is correct! Since there is no gluten in cornflour the sponge will not turn as brown as the usual sponge made with plain flour.

MasterChef Australia is in Hong Kong! The first challenge is a Hong Kong style Mystery Box. Today the judges are looking for the top three cooks to progress into tomorrow’s immunity challenge.
Regarding the name Bao Bun, glad Poh pointed out that Bao means bun (as a noun) or to wrap (as verb), so basically saying Bao Bun is Bun Bun! The correct name for this folded bun should be Gua Bao or Kuah Pau, it’s the proper Hokkien dialect pronunciation since this bun originated from Hokkien or Fujian province. Even in written form it is also confusing for people of Chinese heritage. Written as 刈包 or 割包 (meaning cut bun to differentiate it from the common enclosed buns) in Chinese, and if pronounced in Mandarin as written as Yi Bao or Ge Bao respectively, nobody would know what you mean by Yi Bao although Ge Bao is not so bad, LOL… So we should pronounce the name properly in Hokkien dialect or Taiwanese dialect as Gua Bao or Kuah Pau. It is also called 虎咬豬 or Tiger Biting Pig because the folded bun looks like the tiger mouth and the pork filling is pig! If we can pronounce San Choy Bau (Bow) 生菜包 in Cantonese dialect for the lettuce wrap, we should be able to pronounce Gua Bao for this bun, in order to prevent more confusion since just saying Bao usually means the enclosed buns like Cha Siu Bau 叉燒包.

When Pezza got the salted egg yolks, I was like, quick, go get the red bean paste that Mimi rejected, that’s a classic pairing for the mooncake filling! Haha… Also Lachy said the woodear fungus is pungent, what? It is the slippery crunchy texture that it’s known for. My favourite use of it is to make a sauce of stir fried onion, tomato and woodear and served with pan fried fish fillets, yummy!
