Hi SD, this comment has nothing to do with icyball – I wanted to let you know I’ve just finished baking a sponge cake using your japanese strawberry shortcake recipe. For the ingredient proportions I have my own method that involves weighting the eggs, then weighing out flour, sugar etc as a proportion of the egg weight. However, I still like to refer back to remind me of the method. I suppose I could write the recipe out properly in my own notes, but I’ve been too lazy so far, I’ve only jotted down my proportions and some very brief notes, with the knowledge that I can refer back to your excellent instructions. Many years ago I tried recipe after recipe trying to bake a sponge cake I was happy with, and this recipe was one of my first successes.
I don’t know how much web traffic you get for your old entries, but please know that I still treasure and refer often to the recipes here and on Cafe of the East, and hope you will continue to host them for many years to come. I make your taiwanese pineapple cakes every Chinese New Year, and your snowskin kaya mooncake every mid-autumn, and I still refer back to your photo tutorials if I need to make Chinese flaky pastry.
